Everything here can be found in restorable condition for under 15 K and under 10 K in many cases.
don’t go for porche, or corvette in that era, the porches are a dime a dozen and the corvette looks like shit all the way through the era, not to mention the mechanical failures! (4+3 for ex.)
I would say ferrari has something good in there that you could restore. Personally I’d go with a 280Z, I-ROC, skyline, or my personal favorite would be an 87 pontiac fiero GT with an upgraded tranny and an LS1 under the trunk! (I got mine for $2200, but it didn’t have an LS1, still a great looking car tho)
the fiats would be cool, I think opel and lotus might have some stuff you’d be interested in, personally I’d stay away from the triumphs too.
