Because people usually sort their search results by “ending first,” it really doesn’t matter much. Just stick with the default and save yourself a couple of cents.
I don’t think it matters much. I usually like to list items so they end on a weekend, though. Don’t worry about the time – your buyer might be in a different time zone anyway!
